The chef : Alex Hanna

 

We could not be prouder of our passionate chef Alex Hanna, who won the Myco culinary competition in November 2024. He took the opportunity to share his vision of dining at Le Baluchon:

‘Collaboration with local producers is something essential in my philosophy. Surrounded by lush nature, fields, and forests, we strive to draw inspiration from the different climates and products our region has to offer.

Quebec’s forest gastronomy is exactly the approach I champion in my cooking, so it is an honor for me to have won this award.’

Ambiance

The decor exemplifies creativity and ingenuity. The entire café was created from objects and mechanical parts from an old sawmill. Large pieces of fabric display old texts and images that tell the history of the region.

The Au bout du monde Eco-café offers a menu featuring 80% locally-sourced products. Discover the creativity of our cooks, pastry chefs, and bakers, who take pride in highlighting local foods.

We compost to enrich our agricultural land with organic matter in order to encourage organic farming. Our aim is to reduce, recycle, and reuse, and thereby create taste experiences that come straight from the farm to your table.

The garden terrace

Take the time to relax in the sunlight on our beautiful garden terrace. Sporting a spectacular view over the surrounding countryside, the area is used to grow right here several of the delicious ingredients featured in the Eco-café menu.
